- 1 cup flour
- ¼ cup brown sugar
- ½ cup chopped nuts (walnuts or pecans)
- ½ cup oleo (butter or margarine)
- 2 egg whites
- 1 cup white sugar
- 1 tsp vanilla
- 1tsp lemon extract
- 1 (10 oz) package of frozen strawberries, thawed
- ½ pint heavy cream, whipped
Combine flour, brown sugar, nuts, and butter or margarine. Press 2/3 of it into 13 x 9 pan (reserve the other 1/3 for later). Bake at 400° for 15 minutes.
In largest bowl – beat egg whites, white sugar, vanilla and lemon until the egg whites form high peaks. Gently fold in strawberries and whipped heavy cream.
Sprinkle remaining crumbs on top and freeze until firm.
