In memory of Ginny Falcsik and in honor of Dennis Falcsik
- 1/2 cup peanut butter
- 1/2 cup oleo (butter or margarine)
- 1/2 cup brown sugar
- 1/2 cup white sugar
- 1 egg
- 1 1/4 cups flour
- 3/4 tsp. baking soda
- 1/2 tsp salt
- 1 bag mini peanut butter cups
Combine all ingredients except peanut butter cups. Roll dough into little balls (about a teaspoon each) and place in tassie pan (mini muffin pan). Bake at 350 for 8 – 10 minutes, until golden brown.
Remove from oven. Place a miniature peanut butter cup into the center of each cookie.
Refrigerate pan for about 15 minutes. Remove cookies from pan.
