In memory of Ginny Falcsik and in honor of Dennis Falcsik
- 1 cup softened butter or margarine
- 1 1/2 cups sugar
- 1/4 tsp almond extract
- 4 eggs
- 2 cups flour
- 6 Tbsp unsweetened cocoa
- 21 oz can cherry pie filling
- Sweetened whipped cream as garnish
Cream butter, sugar and almond extract until fluffy. Add eggs, beat two minutes. Combine flour and cocoa and gradually add to mixture. Blend well.
Spread in greased jelly roll pan (15 1/2 x 10 1/2 x 1″). Spoon heaping tablespoons of pie filling over batter (3 rows of 5). Bake at 350 for 25-30 minutes.
Cool. Garnish with whipped cream to serve.
