Ranay writes, “I’m submitting an old family recipe for Orange Cake. My grandma used to make this but never wrote the recipe down. This was a cheap recipe for a magnificent cake. When she passed away, my mom and aunt had to try and replicate the recipe, which took dozens of cakes to do so (some not even edible past the trial bite!). This cake takes a considerable amount of time and effort but it is worth it!”
Prepare one package of yellow cake mix as directed on box, except eliminate the egg whites (reserve these for later) and the oil. Bake in 4 layers, at 350 for 16 minutes each.
Grate 3 oranges (cheap juice oranges work best). Use all of the orange. Set aside.
Put 1 1/2 cups of sugar in a saucepan and barely cover with water. Cook this past the boiling point until you get past drops when picked up with a spoon (think thick syrup-like consistency). While this is cooking, beat 3 egg whites until the mixture becomes stiff. Add egg whites to the hot syrup, then add grated oranges. Frost all 4 layers.
Let cool and serve. Enjoy!
