Key Lime Pie

Ingredients:

  • Graham cracker crust (buy prepared or follow **recipe below)
  • 3 cups sweetened condensed milk
  • ½ cup sour cream
  • ¾ cup key lime juice (8 or 9 small limes usually)
  • 1 Tablespoon grated lime zest

Directions:

Preheat oven to 350o

**Graham cracker crust from scratch… use readily available graham cracker crumbs or crush graham crackers in a sealed baggie. Mix 1-1/2 cups graham cracker crumbs, 1/3 cup sugar, 6 Tablespoons butter in a bowl, then press firmly into an 8 x 8 pan or a 9” pie plate. Bake for about 8 minutes and allow to cool a bit before filling.

Combine condensed milk, sour cream, lime juice and zest. Mix well and pour into cooled crust.

Bake 5-8 minutes, until tiny pinhole bubbled burst on the surface of the pie. DO NOT ALLOW TO BROWN!

Chill thoroughly before serving, and garnish with lime slices and whipped cream if desired.
