Overnight Blueberry French Toast Casserole

Overnight Blueberry French Toast casserole is a favorite in our house for holidays and brunches! Prepare it the night before your event and just pop it in the oven in the morning!

Overnight Blueberry French Toast

Ingredients:

  • 1 loaf of day-old bread, cut into cubes
  • 2 packages of cream cheese (8 oz each)
  • 1 cup fresh blueberries
  • 12 eggs
  • 2 cups milk
  • 1 1/2 tsp vanilla extract
  • 1/3 cup real maple syrup

Directions:

Spray a 13x9x2 casserole dish with Pam. Place half of the bread cubes in the bottom of the dish.

Cut cream cheese into 1-inch cubes. Place on top of bread in prepared pan. Top with blueberries and take a moment to ensure everything is pretty evenly spread out, then top with remaining bread cubes.

Beat eggs, milk, vanilla, and maple syrup in a large bowl until thoroughly combined. Pour over bread mixture. Cover pan with foil and refrigerate overnight.

In the morning, preheat the oven to 350 degrees. Leave casserole on counter while the oven heats up.

Leaving foil on pan, place in pre-heated oven and bake for 30 minutes. Remove foil and bake for an additional 25 minutes (top should be lightly brown).

Serve with additional maple syrup.
